Pong Tay Chicken
Serves 5

Ingredients
1½ kg (1 bird) chicken, skin removed and cut into 15 pcs
30 g (3 tbsps) vegetable oil
100 g (10) shallots
       blended separately
25 g (5 pips) garlic        
55 g (4 tbsps) fermented soybean (taucu), washed under running water
500 ml (2 cups) water
345 g (3) potato, each cut into 8 pcs
8 g (1 tsp) thick soy sauce

Method

  1. Heat oil in a wok, stir-fry the blended ingredients until golden. Add in fermented soybean and fry until fragrant.
  2. Add in chicken and mix well. Add water, thick soy sauce.
  3. Cook until boil. Add in the potatoes and cook until chicken is tender and the sauce slightly thickens.
  4. Serve.

Weight per serving: 400 g
