Pong Tay Chicken
Serves 5 Ingredients
1½ kg (1 bird) chicken, skin removed and cut into 15 pcs
30 g (3 tbsps) vegetable oil
100 g (10) shallots blended separately
25 g (5 pips) garlic
55 g (4 tbsps) fermented soybean (taucu), washed under running water
500 ml (2 cups) water
345 g (3) potato, each cut into 8 pcs
8 g (1 tsp) thick soy sauce
Method
- Heat
oil in a wok, stir-fry the blended ingredients until golden. Add in
fermented soybean and fry until fragrant.
- Add
in chicken and mix well. Add water, thick soy sauce.
- Cook
until boil. Add in the potatoes and cook until chicken is tender and the
sauce slightly thickens.
